Los socios de Vitartis son, en su mayoría, empresas agroalimentarias, pero también desempeñan un papel fundamental en la Asociación las Universidades y Centros Tecnológicos de la Región que trabajan en el ámbito de la alimentación y empresas especializadas en servicios al sector, estableciéndose así un Ecosistema de innovación abierta y colaborativa en el sector agroalimentario de Castilla y León.
